BOSCH UNIVERSAL WHEAT BREAD
6 Cups Warm Water
7 cups Ground wheat flour
2 1/2 Tablespoons Saf Instant Yeast
2 Tablespoons Real Salt
1/2 Cup Vegetable Oil
2 Tablespoons Liquid Lecithin
1/2 cup Honey
2 Tablespoons Vital Wheat Gluten
2 1/2 Tablespoons Dough Enhancer
8 Cups Flour (white wheat or red ground) with a total of about (15-18) cups. you may also want to try half white flour and half wheat.
Combine 6 C. warm water & 7 cups fresh wheat flour. Using the dough hook, mix to paste consistency. Mix in 2 1/2 Tablespoons of yeast then add salt, honey, oil, lecithin, and gluten. Turn machine to speed 2 add additional flour until dough pulls away from the sides of bowl and listen to motor to bare down then increase to speed 3, be careful to not add to much flour. Turn mixer off when all the flour has been kneaded through the dough. Touch the top of the dough with your finger. If it is still sticky add a little more flour. Let knead for 7-8 minutes then add dough enhancer, knead for 2 more minutes with a total of about 10 min. Use shortening on your hands to form loaves. Take dough immediately from bowl pinch off dough to fill pan 1/2-2/3 of the pan. Press dough evenly into pan. Place in plastic bag to keep dough moist while rising. Let raise until doubled or until 1-2 inches above top of pan. Place in preheated oven, set at 350 Degrees bake for 25-30 min
