Bean and Hamburger Burrito


A normal spelt tortilla is made from the spelt tortilla recipe on this blog.  I cook up some hamburger with seasoning and some onion, when the hamburger is well done I add the homemade re-fried beans found at the bottom of the page, to the hamburger.  I spread about 3 tablespoons of this mixture across the tortilla.  I add cheese, tomato's, fresh lettuce and sour cream.


I made this burrito with the spelt tortillas on this blog.  Then we made our own re-fried beans.  Below is the recipe:

Ingredients:
1 lb. of pinto beans
2 Tablespoons of bacon grease or butter
1/4 of a green pepper
1 onion

Directions:
Take your l lb. of pinto beans add 6 cups of water, cook them in your pressure cooker on high pressure for 5 minutes.  Release pressure then rinse beans in colander, add back to your pressure cooker enough water to cover the beans with about 1/2 inch extra.  Pressure again on high pressure for 20 minutes.  Pull of stove and let release by its self.  Dump water off of beans except about one half of a cup.  Saute the green pepper and onion in a frying pan until onions are clear.  Pour this mixture in your beans with 2 tsp. of salt.  

Take a pound of ground beef and cook with salt, and pepper to taste.  Add 1 onion to ground beef and cook completely through.  Add this to your bean mixture.  Spread on cooked burrito with cheese, sour cream, lettuce and tomato's.   This is so delicious you will want to eat it on many other dishes.
