Summer Quinoa Salad
1 mango or pineapple
14 ounce can black beans
1/3 cup of minced cilantro
4 mini bell peppers
2 stocks green onions (use the green part as well)
1 cup white quinoa
Dressing:
3 tablespoons of olive oil
2 tablespoons of vinegar
1/2 teaspoon of sea salt
1/4 teaspoon of black pepper
1 lime juiced
DIRECTIONS
Cook the quinoa in pressure cooker on high pressure for one minute. Once done, leave under pressure for 10 minutes, then quick release, let cool. Dice fruit and vegetables, mix with quinoa. Make dressing by adding all ingredients together and blend. Add the dressing to the quinoa mixture and mix well. Delicious and a very nutritional salad.
(tip: a bag of uncooked black beans is cheaper than cans. Cook one cup in pressure cooker for 25 minutes)
