Sourdough Pizza

Ingredients
1 cup sourdough
2 1/2 cups warm water
1 Tbsp. of Xagave or any sweetener your would like
2 1/2 tsp. of salt
1 tsp. yeast
3 cups high gluten flour or bread flour
3 cups of freshly ground white wheat flour

Directions
Pour sourdough into your bosch mixer, add your warm water.  Put the yeast and sweetener in next.  It is very easy after that you just pour your flour and wheat flour in with the other ingredients. You may need to add just a little more flour.  You want the dough to come away from the outsides of your Bosch.  Your bowl should look clean as the dough pulls away from the bowl. Knead for 7 minutes. This will make 3 good size pizza's.  Roll them each out on parchment paper. Put your wonderful tops on.  Preheat your oven to 450 degrees if you have a stone put it in your oven to pre-heat along with your oven.  Slide your pizza peel under the parchment paper.  Place in oven on stone and cook for 7-8 minutes
