Zucchini Cookies

1 cup butter
1 cup white sugar
1/2 cup brown sugar
2 eggs
1 tsp. vanilla
2 cups grated zucchini
3 3/4 cup of ground soft white wheat flour
2 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. salt
1 cup shredded coconut
1 cup chopped walnuts
1 cup chocolate chips or 1 cup of raisins

Bake on 350 degrees for 15-18 minutes

Beat butter and sugar until light and fluffy; beat in eggs and vanilla until smooth.  Stir in zucchini.  Mix all dry ingredients in a separate bowl,  Add to the wet ingredients.  Then add the rest of the ingredients.  I use the Bosch mixer with the cookie dough paddles.  Make sure your butter is softened, add the sugars and hit the pulse button on the Bosch it is on the left hand side. Mix well. Keep the Bosch running add all the dry ingredients, then add the coconut, walnuts, and chocolate chips.  When everything is mixed drop by 2 Tablespoon ice cream scoop on your cookie sheet.  Bake!
