Kamut and Apple Salad

INGREDIENTS
6 apples chopped apples
1 cup of golden raisins
1 1/2 cups Kamut (makes 3 cups cooked)
1 can of fruit cocktail or pineapple (reserve the juice)
1 cup of chopped nuts (I prefer pecans)

Dressing
1 cup mayonnaise
1/4 cup lemon juice
1/4 cup olive oil
1/4 cup sugar
1/4 tsp. of salt

DIRECTIONS
Cook the Kamut in a pressure cooker for 20 minutes on low pressure in your Instant Pot or Electric Pressure Cooker. Put in one cup of Kamut to 2 cups of water. Cook until tender.  Cool! Mix all ingredients together in a bowl.

Mix altogether, then pour into salad.  Great way to add nutritional value as well as good taste.
