Sourdough Bread w/whole wheat and spelt
In experimenting with different breads, with my daughters. You will love this recipe.
2 cups of white wheat flour
2 cups of white flour
2 cups of spelt ground
Add 2 cups of sour dough that you have bubbling
2 eggs
1/4 cup oil
2 Tbsp. honey
1 Tbsp. salt
2 cups of warm water
Put all ingredients into your Bosch. Start kneading and let knead for 6 minutes. Now if your dough is sticky add a little more flour. It should look like normal bread dough. Very soft and pliable. When it is through kneading put it into a big bowl with a lid to cover it. The lid needs to just set on the top, not be sealed. Let this rise in the bowl for 6-8 hours. You can do this over night, if you do it, do it about 10 o'clock at night. In the morning your dough has risen, pour the dough on your counter that has been dusted with flour. Then form it and put it into the pan you are going to bake it in. I use a tall ceramic dutch oven with a lid that is a 5.5-7 quarts. I form a nice round loaf and put it in my pan. I let it rise for 2 hours. Cut some slits in it. Bake on 400 degrees for 30 minutes with the lid. After the 30 minutes I take the lid off and cook for 30 more minutes. If it starts to get really brown I put aluminum foil over the bread. It cooks great but does not get black. Now if you are using normal bread pans you can cook it the first 30 minutes then watch it. It can cook any where from 5-20 minutes. Just until golden brown.
