GLUTEN FREE PANCAKES AND WAFFLES


Gluten Free Pancakes and Waffles
You will think these are Gluten full, but they are not.  They are beautiful and so good!!!

3 cups Brown rice flour
6 TBSP Tapioca flour
2/3 cup Potato Starch

4 Tablespoons of sugar
3 tsp Baking Powder
1 tsp Salt
1 tsp Baking soda
1/2 tsp guar gum
4 eggs
6 TBSP melted butter
2 3/4 cup milk or (2/3 cup powdered milk and 2 3/4 cup of water)
1 teaspoon vanilla
1/2 cup Chocolate chips (optional - My family's favorite)

In a bowl, mix together all dry ingredients.  All except your baking powder and soda.  In separate bowl, add all wet ingredients except for egg or egg re-placer if you are using it. Make a well in center of dry ingredients. Pour wet ingredients and stir. Fold in eggs / egg replacement.  Now mix your in your baking powder and soda.  Whisk in after everything else is added. Cook in oiled skillet over medium heat, or about 325 degrees on your skillet, spoon batter onto your skillet.  Cook until bubbles begin to form, and the top starts to become dull.  Flip and continue cooking until golden brown on the bottom.  Serve immediately with condiments of choice. We serve with fresh strawberries and powdered sugar or whipped cream on it.  Be creative with your toppings. I also make waffles with this batter, the waffles are much easier to reheat in toaster if you have left over’s.  The pancakes turn out fluffy and delicious.  You can refrigerate the left over waffles or freeze them.
