CHOCOLATE CHOCOLATE CHIP COOKIES

1/2 cup butter softened
1/3 cup shortening
1/2 cup brown sugar
2/3 cup white sugar
2 eggs
2 teaspoons of vanilla extract or 1 teaspoon of pure vanilla
2 cups all-purpose flour, or the wonder flour mentioned on this blog
2/3 cup cocoa
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup semisweet chocolate chips
1/2 cup milk chocolate that has been sliced
1/2 cup chopped walnuts
Preheat oven to 350 degrees.   In large Bosch bowl with cookie paddles, beat butter, shortening, sugar, eggs
and vanilla until fluffy.  combine the flour and all the rest of the dry ingredients in another bowl.  Keep your  Bosch mixer going while you gradually add the dry ingredients.   Then mix your chocolate and nuts in.  Drop by rounded teaspoonfuls onto cookie sheet.  Bake for 8 to 10 minutes.  If you are doing the cupcake cups you will need to cook for only 6 minutes.
When I made these I didn't add any of the chocolate or nuts.  It mades it easier to form them.  Make sure that when you do them you only cover the very top of the muffin tin down half way.  I let the children in my class do these.  Then put their initials in their little cup.  If you put them down to far they will make a flat edge.  That is why you only do every other muffin cup.  Also make sure that you spray them with vegetable spray.  We use vegealene.   Then roll out the dough and cut with a cookie cutter, set on top and spread down to the center of the muffin cup.
The cups can be perfect, you may have to trim a little.  Then fill them with the homemade ice cream above.  You will love these.  They will be a hit at any party.
