Maple Bars
We used the whole wheat bread recipe for these:
6 cups warm water
7 cups ground flour
3 Tbsp. of yeast
1 Tbsp. of a sweetener (We used Xagave)
Add to Bosch, mix, let rest for 15 minutes
Add: 1/2 cup of oil
1/2 cup of honey
2 Tbsp. Lecithin (Optional)
2 Tbsp. of Vital wheat gluten
2 Tbsp. of salt
Mix well and add 10-11 more cups of flour. Add flour until mixer completely leaves the outside of the bowl on the Bosch Mixer. After 8 minutes of kneading add 2 Tbsp. of dough enhancer and knead for another 2 minutes. Take a piece of dough about 1 pd. and roll out into a rectangle. Take a pizza cutter and cut the dough straight down the middle. Then cut the opposite direction in about 1 1/2 inch strips. You want to fry these in hot grease, then dip them in the frosting.
Frosting for Maple Icing
1/3 cup butter
3 cups of powdered sugar (you may have to add more depending on how runny you want it)
1/4 teaspoon vanilla
2 teaspoon maple extract
1/8 cup milk
Mix all together and get ready to dip you maple bar that has been fried into batter.
