Prezels in Vitamix
1 Tablespoon yeast
3/4 cup of warm water
1/4 cup brown sugar (packed
1/4 cup whole wheat flour
1/2 cup white flour
1/4 teaspoon of salt
For covering on Pretzel.
(1 large egg with 2 Tablespoons of water, Kosher Salt)
To proof yeast, combine water, brown sugar and yeast. Stir and set aside for 5 minutes.
Place all dry ingredients in your Vitamix container, secure lid.
Turn on machine and increase speed to Variable 6, blend until a hole forms in the center of your flour mixture, about 5 second. Turn off machine.
Take little plug our of the top of blender, leave lid on. Add the yeast mixture.
Select high speed and turn machine on and off two times. Let dough rest while you coat your baking dish. Then select High speed and turn on and off machine 5 times, add additional water, only if dough seems to dry. Add a Tablespoon at a time. Repeat process of turning on and off 5 times scraping the sides of the container until the dough binds together into a soft, elastic mixture.
Now let the dough rise in the container with the lid on about 15 minutes.
Transfer dough on to lightly floured counter, divide into 12 pieces. With the palms of your hands roll each piece of dough to form a rope about 12-18 inches long. Loop into an oval, twist the ends together and gently press the ends to the top side of the oval. Whisk together the egg and water, slowly and gently brush the egg mixture on each pretzel shape and sprinkle with kosher salt. Bake in a 450 heated oven for 8 to 10 minutes ot until crispy and lightly browned. Best when served warm.
