Broccoli and Cheese Soup

INGREDIENTS
4 tablespoon butter
1 cup diced onion
2 cloves of garlic
4 cups chicken broth
4 cups broccoli
1 cup grated carrots
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup cornstarch
1/2 cup cold water
2 cups cream or half and half
2 cups grated cheese


DIRECTIONS
Select browning or saute on your pressure cooker. Melt the butter and put the onion in and saute it for about 3 minutes. Add the garlic and cook for about 30 seconds, stir in the water with bouillon it it. Add the broccoli, carrots, salt and pepper. Lock the lid in place, make sure the vent is on pressure. Set pressure to high pressure for l minute. Release pressure. Make sure the valve drops to release all pressure. Remove the lid. Mix your cornstarch together with your water. Turn your pressure cooker on saute or browning. Add cornstarch mixture slowly as you mix your ingredients. Bring to a boil then turn your pressure cooker off. Add the cream and grated cheese one hand full at a time until it is completely melted  Mix together! Add more salt and pepper if you need too.
