HUSBAND's FAV BREAD
12 GRAIN BREAD
Ingredients
Mix together in Bosch Mixing Bowl (Yes, I have the Bosch Bread Mixer and you should get one too.)
2 cups of 9 grain cereal
1 cup of sunflower seeds
1/3 cup sesame seeds
1/3 cup flax seed
1/3 cup millet
5 cups hot water
When your water is warm add:
2 cups of high gluten flour or (1/2 cup of vital wheat gluten and 1-1/2 cups of fresh whole wheat flour)
3 cups of whole wheat flour
3 tablespoon yeast
1 tablespoons Xagave or (sugar)
Mix until everything is mixed well
Let set in bowl to rise for about 20 minutes or until an inch from the top of the bowl.
Add:
2/3 cup of honey
2/3 cup of oil
2 tablespoons of salt
(optional) 2 tablespoons liquid lecithin
3 Tbsp. dough enhancer to be added the last 2 minutes of the kneading process
Directions
Mix altogether, add 9 cups of whole wheat flour, if the dough is still sticky to the touch add more flour. Knead in your Bosch Mixer for 10 minutes. Shape the loaves and put them into 5-1 1/2 pound loaves. Rise for 1 hour or until dough is 1-1/2 inches above the pan. Bake on 350 degrees for 30 minutes.
