MAKING PASTA DISHES FROM SCRATCH
This is homemade pasta. It is made with a grain called Kamut. It is a grain that when ground it looks yellow just like your semolina flour, which you usually make pasta out of. This particular pasta is spinach pasta. The recipe is as follows.
1 cup of spinach.
This needs to be cooked, drained and cooled, after it is cooked it needs to equal 1 cup, which is 3 cups of spinach that is uncooked,
3 eggs
1 Tablespoon of olive oil
1 tsp. of salt
3 cups of your ground Kamut
You will need to add the top 4 ingredients together and mix them in your Bosch bowl, then add your Kamut slowly until it leaves the sides of the bowl. Once it starts to knead you need to knead it for 8 minutes. Take out and put in a plastic bag for 1/2 an hour. Then roll into pasta. I use a pasta machine. They are incredible, once again you can get one at the Bosch Kitchen Center
1 stick of butter
1/2 of an onion
1 clove of garlic,
You saute these all together in a pan.
Add one pint of heavy cream
1/2 cup grated Parmesan cheese (This needs be added in slowly and stir it through the whole process, once you start adding Parmesan cheese you have to keep your burner turned down. It can not boil or you will have curds. The Parmesan cheese is what thicks it, so add as much as you like. It will get thicker as it cools.
1/4 of a cup of parsley, the parsley needs to be added last after it is thick or it will turn green.
This is our pasta salad.
This is a pasta salad. This pasta is made with semolina flour, which is ground durham wheat flour.
The pasta is as follows:
6 eggs
2 teaspoons salt
2 Tablespoons of olive oil
2 1/2 to 3 cups of semolina flour
You need to add the flour after you have blended all the other ingredients together. Once it has kneaded for 8 minutes place in a plastic bag for 1/2 hour. Then roll out and cut into pasta, or use a pasta machine. This pasta is cooked by boiling 1 gallon of water, after it has boiled you add your pre-made pasta and cook for about 7 minutes or until done. Put under cold water in a colandar, make it cold for the pasta
The salad is as follows: Place in large bowl the following:
1 green pepper cubed
1/2 of a red onion chopped
2 sliced cucumbers (cut the slices in half)
1 can of olives sliced
Sliced pepperoni or sausage. (This is optional, I prefare it without)
Stir evenly through
1-8 oz Italian dressing
1/4 of a cup of salad supreme
Mix altogether and let sit for 2 hours in the refrigerator. You can put some wedged tomato's in the salad after it has set for the 2 hours. Also put in your pepperoni or whatever you prefare.
