12 GRAIN ROLLS

These rolls are so moist and the reason they are moist is because the grain is cooked in them.

Ingredients
Cook the 3 grains below  (I cook them in a pressure cooker.  Put 4 cups of water together with the grain in you pan and bring to a boil.   Cover turn to simmer and cook for 20 minutes or until soft). 
1 cup 9-grain cracked cereal
1/3 cup millet
1/3 cup white quinoa
1/3 cup flax seed. 
(Let cool until the cooked cereal is just warm)

Add to the Bosch mixer bowl
4 1/2 cups of warm water
Add your cooked cereal
1/3 cup sesame seeds
1 cup sunflower seeds
1 ½ cups white high gluten flour or ½ cup vital wheat gluten with 1 cup white flour
2 cups of whole wheat flour  rise for 20 minutes in Bosch bowl or until it is 2 inches from the top of the bowl.
3 Tbsp. yeast
2 Tbsp. of sugar to help rise faster, or add some honey
Mix well until all ingredients are mixed together, then let

Add these to the rest of the ingredients in the Bosch bowl
2/3 cup honey or molasses
2/3 cup oil
2 Tbsp. salt
Whole wheat flour (approximately 15 cups total) (I grind my flour fresh in the Nutri Mill)
 3 Tbsp. of dough enhancer

Directions
 I  add 2 cups of wheat flour and 2 cups of white flour, if I do not have vital wheat gluten.  Let sit until mixture has risen about 2 inches away from the top of the bowl. About 15-20 minutes.  Add, honey, oil, salt and mix together. Add whole wheat flour 1 cup at a time until mixture cleans outside of the bowl.  You add approximately 11 more cups of flour.  Knead 8 minutes.  Add dough enhancer. Knead another 2 minutes. Then it is time to form these into a ball. The balls are in between the size of a tennis ball and a ping ping ball. You should fill 2 large cookie sheets.  4 on each row with 6 rows. Bake for 20-25 Minutes  Yield: 48-50 rolls.

You can divide this in half if you chose too.  Just make sure that you leave your Bosch mixer on speed one to start out.  Then turn to speed 2 to finish the kneading process. The Bosch Compact will hold this recipe if you half it.
