12 GRAIN BREAD BECOMES 16 GRAIN BREAD

I experiment with different types of bread all the time.  I try to make them as healthy as I possible can.  The recipe for this bread is as follows:  Grind together spelt and hard white wheat.  About 4 cups of spelt and 8 cups hard white wheat. Gather together:
1/2 cup of 9 grain cereal   (The grains found in this cereal consist of  white wheat, red wheat, oat groats, barley, corn, millet, flax seed, rye, and buckwheat.)
1/4 cup of sweet brown rice
1/4 cup of millet
1/4 cup of white quinoa
1/4 cup steel cut oats
3 Tablespoons of amaranth

You take all these wonderful grains and you cook them in your electric pressure cooker.  Put in all grains with 3 cups water. You cook them for 15 minutes on low pressure.  Once they are cooked put them in a bowl in your refrigerator until they are warm.

Pour the cereal in your Bosch bowl with
 3 cups warm water to the bowl.
Mix a little. then add 1 cups of High Gluten Flour, or (white flour that you have mixed 2 Tablespoons of gluten flour too.) 
Add 3 cups of your freshly ground flour.
2 Tablespoons of yeast
1 Tablespoons of the sweetener of your choice.  (white sugar, brown sugar, Xagave, honey) 

1 cup sunflower seeds
1/4 cup flax seed
1/4 cup sesame seeds mix then add:
3 Tablespoons of chia seed.

Let this rise in your Bosch bowl until about 4 inches from the top.  After it is risen add

1/2 cup of honey or xagave
1/2  cup of oil
1 Tablespoons of salt
2 Tablespoons of  vital wheat gluten
2 Tablespoons of liquid lecithin and mix all together

Then you add your ground flour until the sides of your Bosch bowl are clean, about 5-6 cups A rule of thumb is that when you have all your ingredients mixed in, touch the top, if it is still sticky add some more flour slowly.  Mix together for 7 minutes, add your 2 Tablespoons of dough enhancer and blend two more minutes.  Do not over knead it, it will break down the gluten if it is kneaded to long. Form into your pans. Let rise for 1 hour.  Make sure you only fill your pans half full of the dough.  Bake on 350 degrees for 30 minutes or until golden brown.
