OATMEAL MOLASSES BREAD

This bread was made on the pizza stone.  It cooked for about 15 minutes.  It is a wonderful bread that you would enjoy making.   It is made with molasses, hard white wheat flour, rye flour and oatmeal.  Wonderful grains that are extremely good for you and your family.  Below is the recipe.
Ingredients

5 cups warm water
3 eggs
¾ cup oil
½ cup honey
½ cup molasses
2 cups rolled oats
7 cups whole wheat flour
3 Tbsp. yeast
2 Tbsp. salt
3 Tbsp. dough enhancer (optional)
3 Tbsp. vital wheat gluten (optional)
6-8 cups white flour (I use all wheat flour with the rye mixed in, see directions below)

Directions
The first step is to grind your flour fresh in your Nutri Mill. I actually add 8 cups of wheat with 2 cups of whole rye.  It makes it delicious.  If you want more of a rye flavor you can add 4 cups of the whole rye. Then prepare your Bosch mixing bowl with the kneading arm, dough hook and splash ring in the bowl. Pour in your water. add 6 cups of your flour in the bowl with your gluten and your yeast.  After you have mixed it well let set for 15 minutes then add the oil, honey, and molasses, rolled oats, eggs and salt. Mix and then add the rest of your flour 1 cup at a time. Add about 7-8 more cups of flour. Just wait until the outside of the bowl is clean.   Knead 8 minutes.  Add 3 Tbsp. dough enhancer and knead about 2 more minutes.  Form into 2 little loaves of bread on each cookie sheet, allow to rise until double in size.   About 1 hour. The brush the tops of your loaves with 1 egg white to which 3 Tablespoons of water has been added.  Mix well! After you have brushed generously you can sprinkle oatmeal on top.  Press down very lightly, you do not want to flatten you bread now that it has risen. Makes 6 loaves of bread. Bake at 350 degrees for 30 minutes or until golden brown.
