SOUR DOUGH BREAD

3 cups of warm water
4 cups of white flour
3 Tbsp. Saf Instant Yeast
3 Tablespoons sugar
Mix above ingredients together and let set for 20 minutes then add:
1 cup sourdough starter
1 Tbsp. salt
2 Tbsp. olive oil
Add enough flour to clean the outsides of the Bosch bowl about 6-7 cups of white flour.

Directions
Gradually add flour until dough pulls away from sides of bowl.  Mix for 6 minutes.  Place 2 loaves of dough on each large cookie sheet lined with parchment paper.  This recipe will make 6 loaves. Rub with egg wash (Egg white mixed with 2 Tablespoons of water)  Brush the tops of the loaves generously with egg wash using a pastry brush.  Let rise for 1 hour, place in 350 degree oven for 25 minutes.  If it is not brown on the bottom take off cookie sheet and place on the rack of your oven and cook an extra 3 minutes.

We eat this delicious bread by cutting it up and putting fresh hot roast on one piece, then we put beautiful mozeralla cheese on the top and dip it in the left over drippings from the roast, we cook the roast all day long in a 325 degree oven packed with onions around the sides.  We cook it for about 6-8 hours or until very tender. We brush the whole roast in a olive oil mix with salt and pepper added generously. Cook in 1 cup of water.  So delicious you can not put it down.

You can make your own sour dough starter by finding a 2 quart plastic container and mixing 1 cup of water to 1 cup of white flour.  Leave on your counter over night.  Next day add 1 cup of flour and l cup of water, leave on conter over night.  Next day repeat the same process.  Keep in your refrigerator until needed, then use until your sour dough gets down to two inches.  Repeat the process of 1 cup flour to one cup water and leave on counter over night.  Do this until you have enough, then store in refrigerator.  If you like really sour dough starter add milk instead of water, it works.  If you want this to be super sour dough starter, use milk instead of water.  You will love it.
