BEAUTIFUL YELLOW CUPCAKES
These beautiful cupcakes were made in our cupcake class for Halloween, but you can make them and layer them for any Holiday that you wish. If you look really close the bottom layer is yellow. Then it has another layer which is orange. You cover it with white frosting and cute sprinkles on the top. Then put a cute little candy corn on the top and you have a candy corn cupcake.
Here is the recipe: ( 8 ounces equal one cup, 2 Tablespoons equal one ounce or 1/8 of a cup)
1 1/8 cups of cream cheese (9 ounces)
1 1/8 cups of butter (9 ounces)
2 1/4 cups of sugar
8 eggs
2 1/2 cups flour
1 teaspoon of baking powder
Cream your sugar butter and cream cheese together. Do this in a Bosch mixer with the cookie paddles. Add your eggs and mix well. Then add your flour and sift together with your baking powder. Mix the flour in well, then you can pour it in 2 cup cake tins. It will make 24-28 cupcakes, or a 9 by 13 inch cake pan. We used soft-gel colors from the Bosch Kitchen Center to get the different layers.
Cream cheese frosting:
1-8 ounce package of cream cheese
1 stick of butter or 1/2 cup of butter
4 cups of powdered sugar (confectioners sugar)
1 teaspoon of vanilla
