You know those
Do you want some thing that is good, nice and fluffy? Do you want  peppermint candies that just melt in your mouth? Well we found the perfect recipe!  You can even add them to your favorite hot chocolate.
3 egg whites
3/4 cup of sugar
1/8 of a teaspoon of peppermint oil

Take your egg whites and sugar, put them in a bowl that can be put inside a pan of hot water.   Heat some water on the stove in a large pan.  Do not let it boil.  You can have bubbles in the water but don't let your water boil.  Turn it down. Take your bowl and put it in the water and stir the ingredients in the bowl. Stir this for 3 minutes.  Until the sugar in melted.
Pour the mixture into your Bosch mixer with your wire whips, to which the dough scraper has been attached and beat for a long time.  Long enough that your meringue will form peaks. 5-10 minutes. Then you take a pastry bag to which a 2 C tip has been attached.  Take the bag an paint with a little paint brush 4 strips up the pastry bag. Use some red food coloring. Scoop in the white meringue. You squeeze out the little drops on silicone mats, which has been put on a cookie sheet. We tried parchment paper, but it sticks  Use the mats.You can make them large or small. You will make a lot with this recipe. Cook them on 175 degrees until they are hard.  It will take along time.  About 1 hour or longer.  It could take l hour and and 45 minutes, especially if you make them large at all.  You need to wait until they are hard. to the touch.  Do not cook until brown. If you try to pull one off the tray and it sticks. They are not done. They will not get soft in a bag, you can let them sit for a few days,  if you cook them long enough.  Put them in hot chocolate or just eat plain.  They are the best ever and they will melt in your mouth.
